Pork Tenderloin w/ Sauteed Vegetables

Gasp! Dreaded leftovers. As I stand looking as the pan of leftover pork tenderloin resting peacefully in the fridge I realize that I can't feed the husband the same thing from the night before.

Then I noticed the beautiful veggies sitting in the crisper, and just like that this delicious recipe magically appeared.




Ingredients:

1/2 lb. pre-cooked Pork Tenderloin, sliced
2 carrots, chunky diced
1 green bell pepper, halved & sliced
1 onion, halved & sliced
1 turnip, peeled, quartered & sliced
2 Tbsp. olive oil
1/2 Tbsp. dry oregano
1/2 Tbsp. dry parsley
1/4 tsp. crushed red pepper
1/2 Tbsp. basil
1 tsp. garlic powder
salt & pepper, to taste


Directions:
  1. In a medium fry pan heat olive oil, onions, bell pepper, turnip & 1/2 of the seasonings.
  2. Saute on medium-high heat until onions are translucent & veggie are just tender.
  3. Add sliced pork, reduce heat to medium, add remainder of the spices & continue cooking until the pork is warm.
Prep & cook time: 30 minutes
Serves 4
