Rosemary & Pecan Crusted Salmon with Garlic Butter Asparagus

All too often I hear people tell me that they don't like fish or the they like it but they have no idea how to prepare it so therefore they do not eat it. I say hogswallow!!! (thank you Hagrid for that fantastic word

I say if you find the right fish then you will find the right recipe to go with it. I mean look on the bright side, its one of the best meats to try new flavors on. Check out the following recipe and you will see just what I mean.



Ingredients:
Note: I used a food processor for chopping

4 frozen Salmon fillets, skin on
1 cup pecans
2 sprigs of fresh rosemary
1/2 tsp. salt
1/2 tsp. pepper
3 Tbsp. butter

Directions:
  1. Heat oven to 450 degrees.
  2. In a medium glass bowl melt butter then set aside.
  3. In the food processor add: pecans, rosemary, salt & pepper
  4. On medium speed, grind until the pecans are roughly chopped
  5. Pour mixture into a separate medium glass bowl & set aside.
  6. Next, line a baking sheet with foil & spray with non-stick spray.
  7. Now dip the flesh side of the fish in the melted butter & then dip into the pecan mixture. Repeat for each fillet.
  8. Place the fillets on the baking sheet, skin side down.
  9. Bake for 15 minutes, fish will be tender & the flesh a beautiful pinkish color.



With these delicious little touches the fish will come out perfectly every time. You will no longer have to worry what to do with & whether or not your family will enjoy it.

The next dilemma will be, what to serve on the side? No worries, I have that covered too....

Ingredients:

1 bundle fresh asparagus
1 tsp. finely chopped garlic
1 tsp. butter

Directions:
  1. In a medium fry pan on medium-high heat place butter and garlic.
  2. Next, rinse asparagus & remove the bottom.
  3. Place in pan, turn once or twice to coat them in the garlic butter & then leave them alone.
  4. Reduce the heat to low, cover, & saute about 10-15 minutes. Asparagus will be tender but still have a crunch.


Now the meal is complete. You have the fantastic nutty flavor of the fish combined with the amazing garlic butter asparagus. This is a meal that is sure to change every one's mind about fish. ENJOY!!!
